Fast, easy, healthy options are what I’m all about when it comes to any meal really but especially breakfast! That’s what I love about these Mini Spinach and Mushroom Omelets! They are SO easy to put together and prep ahead of time, and then when we want them for breakfast (or lunch or dinner), we just pop them in the microwave for a few seconds. And, wala!
