I don’t know about you, but we love a good pizza night around here. But our typical go-to always leaves me feeling blah for the next day or so. I wanted to switch it up and make and had heard great things about the cauliflower-crust pizza trend, and we love cauliflower mash. So I decided to go for it, and I’m so glad we did!!!
I love that this is a perfect way to get some extra veggies in and to cut the carbs on a normally carb-heavy dish. My husband was skeptical at first, but both he and my 1-year-old loved it! Continue reading →
Keeping meals simple and flavorful, like this Blackened Chicken, is how I stay on track and meet my goals. I mean, really, who wants to eat bland, boring food all the time? Not me! And, when I tried to force myself to do that, I was never successful for very long.
So, I try to come up with recipes or tweak some old favorites to make tasty and healthy dishes that we can enjoy as a whole family. This is one of my favorites, especially this time of year! Plus, it’s so easy to serve on a salad or over rice with a veggie for a complete meal in minutes!Continue reading →
I’m always looking for sweet alternatives, especially since I’ve been sticking to a very low to no added sugar diet. Now, before we got anywhere, don’t get me wrong. As we head into Christmas week, I decided the best way to kick it off was with one of our favorite family traditions. Actually, my husband gave me the idea, so I’ll share a few of his memories of the tradition as well as our “secret” family recipe, courtesy of my father-in-law. If you’re looking for a relatively simpletradition to start this Christmas, it’s not too late to give this one a try. Pop some popcorn, add a little Carmel, and enjoy this delightful family recipe! I’m not necessarily a “have your cake and eat it too” type of person because I understand I have to have boundaries; however, when it comes to the holidays, it just doesn’t seem right unless I have a few festive goodies about the house to snack on ahem, share with others. 😉 Anyway, I wanted a few ways to lighten up some of my favorite holiday treats, so this is what I’ve come up with – my ingredient swaps for healthier holiday treats.
