There were few meals I loved more growing up than a warm bowl of my mom’s chili. Today, if I’m needing a little encouragement or reminder of home and family, chili is still one of my go-tos. plus, it’s an easy, healthy recipe! I follow my mom’s recipe almost to the “T,” but it still never tastes quite the same as hers ever did does. Yet, it’s still a great reminder of good times I had as a child and serves a delicious, frugal, and healthy meal.
I understand that chili is traditionally more of a fall or winter dish, but I just can’t help but make it when I’m looking for something that’s low prep yet delicious and still on the healthy side of the menu.
