If you’ve been around here long, you know I love all things sweet. But what you may not know is that I also love all things breakfast. In fact, I can still remember Saturday mornings when my dad would get up before the rest of us and fix a big breakfast, and to this day, I still love when we’re visiting for the weekend and my dad makes one of his breakfasts. So what is my favorite? You may have already guessed…French toast!
I’ve always loved baking sweets and treats for the ones I love. (Seriously, ask my hubby. I used to mail him boxes of cookies when we were dating and living 6 hours apart.)
Today not much has changed. I still love sharing baked goods with my sweet little family. But instead of the regular variety, I tweak my recipes to make them a little more nutritious (without sacrificing on flavor)!

After having been on vacation and losing a week to more travel and other activities, I was really needing to get back on track with my eating but still wanting a little something fun, so I came up with this Chunky Monkey Oatmeal.
