I don’t know about you, but I definitely have a tendency to get in a bit of a food “rut.” Fortunately I am someone who can literally eat the same thing for several weeks in a row and not really get tired of it, but I’ve found that that also leads me to not branching out and trying new things as often as I could (or maybe even should).
So I always love trying a new program with a different meal plan to help push me out of my comfort zone and try new things. And believe me the current program I am following is doing just that! But y’all! The new recipes I have tried have been SO good! These sweet pepper poppers just happen to be one of my favorites, so I had to pass them along!
Like most of my recipes, these are SUPER simple, and you could easily change them up by opting for a different cheese or a different variety of peppers! These are also easy enough for a regular weekday snack option but “fancy” enough that they’d make a great appetizer for a small party or get together!
- 3-4 sweet peppers
- 1-2 tablespoons goat cheese
- Set oven to broil.
- Cut peppers in half so you have 2 "boat-like" pieces.
- Rinse and seed peppers.
- Carefully fill each pepper halve with goat cheese, separating evenly.
- Place filled pepper halves on baking sheet.
- Place sheet in the oven and broil 3-5 minutes.
- Watch closely and remove when the cheese is golden brown and the sides of the peppers are slightly charred.
- Let cool 1-2 minutes and enjoy.
Tip: I’ve found that roasting them just a touch longer gives them a bit of a better char and really brings out the sweetness of the peppers. So don’t be afraid to let them get a little brown on top and on the edges. But be sure to watch the oven because you can pretty quickly go from from delightful golden brown morsel to inedible blacked hockey puck. (Ask me how I know.)
Give them a try and let me know what you think! They’re definitely going to be a snack options that makes it into my rotation pretty frequently! They remind me of those jalapeno poppers only without the stomach yuck after!
