Holidays for me have always been about the food. Okay, let’s just be real honest. Holidays for me have always been about the desserts. I can’t pass up an indulgent treat, and a holiday is the perfect excuse to go big or go home. In recent years I’ve tried to break that cycle a little, but I still find myself feeling a bit dissatisfied if I just avoid them altogether. So I have started either planning in a little room for a small treat or I look for a healthier alternative that does fit into my plan. The nutrition plan I’m following right now doesn’t have much room for “cheats,” so I decided to whip up a healthy Valentine dessert. And let me tell you, it does NOT disappoint!
I was inspired by this recipe, but I tweaked it a little to really fit my tastes. So I thought I’d share my variation in case you’re looking for something a touch sweeter and more chocolatey. The dessert is delicious on its own, but there are tons of fun ways you can serve it too to really set it apart. I used heart cookie cutters and made these sweet little heart-shaped apple dippers to go with ours, and they are a perfect Valentine treat! The mousse would also be delicious with whole wheat graham crackers, strawberries, or nearly any kind of fruit!
- ½ cup ricotta cheese
- 2 teaspoons cocoa powder
- ½ teaspoon pure vanilla extract
- 2 teaspoons stevia powder
- Dark chocolate chips (for garnish)
- Measure and combine ingredients in a small bowl.
- Whisk until light and fluffy.
- Cover and refrigerate for at least 1 hour.
- Serve cold and garnish with dark chocolate chips if desired.
Just because you’re working on your nutrition doesn’t mean you can’t have fun treats once in a while. Just look for healthy alternatives, like this light and fluffy Chocolate Ricotta Mousse! It’s the perfect Valentine dessert, but it’d be just as delicious any other time of the year!
