Chunky Monkey Oatmeal

I am always looking for fun new breakfast recipes that are still HEALTHY! After having been on vacation and losing a week to more travel and other activities, I was really needing to get back on track with my eating but still wanting a little something fun, so I came up with this Chunky Monkey Oatmeal.Breakfast is an easy time to make or break the rest of the day. Try this nutritious but fun oatmeal recipe for a unique breakfast or snack option!















It’s super-yummy, and the best thing is you won’t even miss any sweetener! So, go ahead and give it a try, and let me know what you think!

A naturally sweetened oatmeal perfect for breakfast or a snack
Cuisine: Breakfast
Serves: 1 serving
  • ¼ cup old fashioned oats
  • ½ cup water
  • ½ banana, sliced
  • 1 teaspoon natural peanut butter
  • 2 tablespoons unsweetened shredded coconut
  1. Combine oatmeal and water and microwave 1-2 minutes.
  2. Stir until combined.
  3. Top with banana, peanut butter, and coconut.
  4. Stir until combined.

You could even toss on a few dark chocolate chips or cocoa nibs if you wanted to get really crazy. 😉 If you are a 21 Day Fixer, the container count on this is 1 yellow, 1 purple, 1 orange, and 1 teaspoon.
